【自家製】蔥花蝦米腸粉 [Eng Sub]

  • 粘米粉 60g Rice Flour
    粟粉 20g Corn Starch
    澄麵粉 10g Wheat Flour (Starch)
    油 10g Cooking Oil
    水 260g Water
    鹽 少許 Salt
    蔥 2pc Spring onion
    蝦米 20g Dried Shrimp

    砂糖 3g Sugar
    豉油 10g Soy Sauce
    水 10g Water

    1.蝦米用熱水浸軟,蔥切粒備用
    2.在蒸盤上刷油。
    3.把沾米粉、粟粉、澄麵粉、鹽和水混在一起攪匀,然後倒蒸粉在蒸盤上(每次約2mm厚)。
    4.在鑊中加水隔水蒸2分鐘,離火。
    5.蒸完後,用鏟拿出腸粉,捲起後每塊切約2寸。
    6.灑上花生醬、豉油、甜醬、葱花及芝麻。
