青咖喱雞醬 Ingredients for Green Curry Paste 香茅1條 - 1 stalk of lemongrass 南薑約拇指大小 - A thumb size of galangal 香菜根莖2條 - 2 stalks of coriander roots 蒜2瓣 - 2 cloves of garlic 青辣椒約10條 - 10 Thai green chilis 青指天椒4條(隨意) - 4 green bird's eye chilis (optional) 箭葉橙皮（半個）- skin of half a kaffir lime 紅蔥頭1個 - 1 shallot 鹽1茶匙 - 1tsp of salt 孜然粉半茶匙 - half a tsp of ground cumin 蝦膏半茶匙 - half a tsp of shrimp paste
去骨雞腿2件 - 2 boneless chicken thigh 水茄25粒 - 25 pea eggplants 紅尖椒1條 - 1 red chilli pepper 檸葉4片 - 4 kaffir lime leaves 冬笋10片 - 10 slices of bamboo shoots 泰國茄子5個 - 5 Thai eggplants 泰羅勒葉15塊 - 15 Thai basil leaves 水（或雞湯）1杯 - 1 cup or water (or chicken stock) 魚露1湯匙 - 1tbsp of fish sauce 椰漿300毫升 - 300ml of coconut cream 棕櫚糖（或紅糖）約4茶匙 - 4tsp of palm sugar (or brown sugar)
