    Now to be honest, my mom’s chicken adobo isn’t all too great, she butchers the chicken and leaves tiny bone fragments in the soup, which she says “adds flavor” to the stew. So steer clear of my mom’s chicken adobo if you don’t wanna eat shrapnel.

    Her pork adobo, on the other hand: perfection. The real deal adobo. I’ve yet to try any pork adobo that matches my mom’s, on a scale of fragrance and flavor content.

    I'm Black and Filipino and I learned my history. Filipino is fusion food. The Spanish controlled the Philippines for 333years and the Chinese trade and French pass through having a high influence on food and language. My Filipino half disowned my mother cause of her choice of choosing a black man. Reason you see a Filipino they look Spanish Chinese mix.
